Ingredients for Lemon Rose Water Cake
Lemon: Opt for fresh and organic lemons for optimal taste. I recommend tasting the cake batter before baking. Some lemons don’t have as intense taste so you might want to add in extra zest or juice.
Rose Water: One tablespoon of rose water will go a long way. Be careful not to pour any more than the recommended amount, otherwise the glaze will taste soapy. Rose water has a subtle floral taste which pairs heavenly with lemon.
Milk: Besides whole milk, you can use any other plant based milk. My personal favorite is unsweetened almond milk. The milk in the cake butter cuts down the acidity and ensures a moist cake.
How to make lemon rose water cake:
To make the lemon rose water cake, cream together sugar and butter and then incorporate the eggs. Add the wet ingredients followed by the dry ingredients and combine. Transfer the cake batter to the pan and bake. Prepare the rose water glaze and drizzle on top of the cooled cake. Decorate with sprinkles and dried rose petals.
How to make a moist lemon cake?
For an extra moist cake the recipe uses a higher fat ratio and milk in the batter. Mixing the batter just until combined is also a key to achieve a tender and moist texture.
What does rose water taste like?
Rose water has a predominantly floral aroma and flavor. It is not considered to be sweet or savory.
How much rose water to add to cake?
When baking with strong profile flavors such as rose water you don’t need a lot. Just 1 tablespoon is enough to give your cake a nice floral taste. More than 1 tablespoon will result in a soapy and unpleasant taste.

Lemon rose water cake will keep fresh for up to 3 days at room temperature stored in an airtight container. You may freeze the cake before adding the rose water glaze for up to 2 months covered tightly with plastic wrap.

Instructions
Preheat oven to 350°F (180C).
Grease a 10.2 inch heart shaped pan and set aside.
In a large bowl using a hand mixer, cream together granulated sugar and unsalted butter on medium speed for 3 minutes until light in color. Scape down the bowl when necessary.
1 & ¼ cups Granulated Sugar, 3/4 cup Unsalted Butter
Add the eggs one at a time, incorporating well after each addition. The mixture will look curdled. It's normal.
3 Eggs
Mix in the milk, pure vanilla extract, lemon juice and zest.
1/2 cup Milk, 1/2 tsp Pure Vanilla Extract, 1/4 cup Lemon Juice, Lemon Zest
With the mixer running on low, gradually incorporate the all-purpose flour and baking powder. Add the salt and mix until just combined.
Pour the batter into the greased pan and hit the pan once on the counter to release any air bubbles.
Bake for 45 minutes until the cake is golden brown around the edges and an inserted toothpick comes out clean with little to no crumbs.
Remove from oven and let it cool complete inside the pan.
Rose Water Glaze
In a medium bowl whisk together sifted powdered sugar, milk, rose water and salt until smooth. The consistency of the glaze will be medium-thick. For a more runny glaze, add 1 extra tablespoon of milk.
2 cups Powdered Sugar, 2 tbsp Milk, 1 tbsp Rose Water, 1/2 tsp Salt
Add the red food coloring and whisk until combined.

Decorate Cake
Remove the lemon cake from the pan and place on a flat surface.
Evenly drizzle the glaze on all sides of the cake.
Top with sprinkles and dried rose petals.

Use fresh organic lemons for optimal flavor and fragrance.
After adding the eggs, the mixture will look curdled. Do not worry, it will come together once you incorporate the flour.
The recipe works well with plant based milk too.
Do not overmix after adding the flour as it will result in a dense cake.
Note that ovens bake differently, so yours may take a little less or a little more time to bake.
Make Ahead & Storage Instructions: You may prepare the rose water glaze up to 3 days ahead of time and store in the refrigerator. Bring to room temperature when ready to use and whisk until smooth. Add a splash of milk if needed.

The recipes takes just 1 hour and the frozen puff pastry dough makes the process so easy. These mini danishes are bursting with flavor and will be a showstopper to any brunch.
Ingredients for Mini Salted Caramel Apple Crumble Danishes
The Fillo Factory Organic Puff Pastry: I cannot recommend this puff pastry dough enough. It is organic, made with just four ingredients and its quality is amazing. There is the perception that puff pastry is hard to work with. It is true, if you are using the wrong puff pastry brand. The Fillo Factory Puff Pastry Dough is properly packaged. That way, you can easily unfold it and work with it. Most importantly, it is light, fluffy and puffs up beautifully.
Apples: What apples work best for apple crumble? After many tests, I find a combination of Honeycrisp and Pink Lady apples to perform best. They are crisp with a delicate sweet-tart flavor which pair perfectly with warm spices and caramel. Granny Smith and Gala varieties work equally well. I suggest using two varieties of apples for a more complex taste but you may also use just one.
Salted Caramel: It is no secret that caramel and apples work miracles together. I found that salted caramel has a more buttery flavor that compliments ideally the puff pastry dough for this recipe. The saltiness enhances the caramel flavor and adds more depth.
Spices: Ground cinnamon, ground nutmeg and ground ginger give the perfect fall vibes and intense warm aromas to these pastries.
How to Make Mini Salted Caramel Apple Crumbles
Defrost puff pastry in refrigerator for 2 hours or one hour at room temperature before use.
Salted Caramel:
In a medium saucepan whisk together granulated sugar and water. Bring to a boil over medium-low heat, until the granulated sugar has completely dissolved. It will take between 3-5 minutes. Continue cooking over medium-low heat for about 8-9 more minutes until the mixture turns to a deep golden brown color. Do not stir at all during this step!
Remove saucepan from heat and pour heavy cream while whisking vigorously. Be careful, as the caramel will immediately start bubbling. Return to heat and stir in butter and vanilla extract until fully incorporated. Remove saucepan from heat and stir in salt. The caramel should be smooth without any lumps. Transfer caramel to a mason jar and set aside to completely cool before using.
Apple Filling:
In a medium bowl add peeled and cubed apples and toss with lemon juice. Make sure all apples are coated. Melt butter in a medium saucepan and then add the apples. Cook over medium heat for 5-7 minutes, stirring occasionally. Remove saucepan from heat and sprinkle with ground cinnamon, ground nutmeg and ground ginger. Give it a stir. Pour 1/2 cup of the room temperature caramel and stir until well combined (see photo 1). Set aside.

Apple Crumble Topping:
In a medium bowl, combine all-purpose flour, old-fashioned oats, brown sugar, chopped pecans, ground cinnamon and salt. Add melted butter and stir with a fork until the mixture is evenly moistened (see photo 2). Set aside.
Assemble:
Preheat oven to 400°F (200C). Unfold the puff pastry sheets and lay out on a clean work surface. Use a knife to cut along the fold marks to create three equal sized strips. Cut each strip in three to make a total of 18 rectangles.Transfer puff pastry rectangles into 2 large ungreased baking sheets. Space them 1 inch apart. Using a paring knife, lightly score a 1 inch border around the edges of each pastry rectangle, then use a fork to prick the center area of each one (see photo 3 & 4).

Use a pastry crimper and roll around the edges of each puff pastry rectangle. Spoon the apple filling onto each puff pastry piece (see photo 5). Make sure the filling stays inside the scored border. Sprinkle the crumble mixture over the apple filling (see photo 6).

Whisk together the egg and water. Brush the edges of each puff pastry rectangle with a thin layer of egg wash (see photo 6). Bake pastries for 20 minutes until golden brown and puffed. Remove pastries from the oven. Let them cool on the baking sheet for 10 to 15 minutes.
Glaze (Optional):
Whisk together powdered sugar, heavy cream and pure vanilla extract until it reaches a thin glue-like consistency. Drizzle on top of the warm apple crumble danishes and serve. Enjoy!
Make Ahead and Storage Instructions:
You can prepare salted caramel sauce in advance and store in refrigerator. Bring to room temperature before use. You can also prepare the puff pastry and crumble topping a night before baking. Arrange the puff pastry in baking sheets as instructed and cover tightly with plastic wrap. Likewise, cover the crumble topping and refrigerate. Follow the rest of the recipe as shown. The mini salted caramel apple crumble danishes are best served warm, the same day they’re made. You may refrigerate leftovers covered, for up to 2 days.
Can you freeze Mini Salted Apple Crumble Danishes? Yes! Place any leftovers on a single layer uncovered in the freezer until they’re completely frozen. Then, wrap the frozen pastries tightly in plastic wrap or aluminum foil and freeze up to two weeks.

Salted Caramel

Salted Caramel: You can use homemade or store bought salted caramel for this recipe.
If making your own salted caramel, you may adjust salt to your liking.
Don’t leave caramel unattended as it can burn fastly.
Avoid halving or doubling the salted caramel recipe. This will prevent sugar from melting properly.
You can store the remaining salted caramel in the refrigerator covered airtightly for up to 1 month.
Apple Filling: I used Honeycrisp and Pink Lady apples. You may also use Granny Smith or Gala apples.
You can use sliced apples instead of cubed.
Do not overcook apples. 5-7 minutes are enough to soften the apples but still maintain their texture.
By scoring the outside border, the pasty will rise and puff up while baking and the center will stay shorter and hold the apple filling.

Homemade cookies are always a good idea! As the temperature is slowly dropping here in Maryland and most of the mornings are foggy lately, I was reminiscing about my mum’s cinnamon cookies. A hot mug of coffee while dipping some of these crispy cookies in. My farewell to fall are these leaf-shaped cinnamon cookies. As we see the colorful fall foliage, let’s remember that nature is preparing for the next stage and blossom is closer than it might feel!
These crispy cinnamon sugar cookies should be in your plans for today. It is the easier cookie recipe you have ever made. Crispy, not overly sweet, lots of warm cinnamon spice and most importantly these cookies smell divine! If you would like to try something different rather than soft cookies and snickerdoodles I urge you to try this recipe. For the record, in Greece we call these cookies “biscuits” due to their crunchy texture. A Greek biscuit is an American cookie. Ok; let’s get started!
How to make Cinnamon Sugar Cookies:
Make cookie dough.
You will only need a few simple ingredients for the recipe so make sure to follow the exact steps. Firstly, mix the dry ingredients together and set aside. Moving forward, continue by mixing the wet ingredients with the sugar. The creamed butter and sugar provide the base for the cookies and the eggs give structure to the mixture. Moreover, vanilla extract gives a touch of aroma and cinnamon give the key flavor to the crispy cinnamon sugar cookies. Lastly, salt balances the sweetness so don’t omit it.
Shape cookie dough.
Shape the cookie dough in a disk and wrap in plastic wrap. You can divide the cookie dough into two pieces as it will be easier to roll out.
Chill cookie dough.
30 minutes inside the refrigerator are enough to make sure that the cookies will hold their shape.
Roll out the two pieces of cookie dough.
Roll the cookie dough on lightly floured surface until 1/4 inches thick.
Cut into desired shapes and add brown sugar and extra cinnamon.
Cut the cookies using your preferred cookie cutters. Mix the brown sugar and cinnamon in a ball and sprinkle on top of the cookies. With a spoon press down the sprinkles. Avoid touching the fresh cutouts with your hands as the warmness of your fingers will affect its structure.
Bake the cookies.
After that, transfer the cookies into lined baking sheets and bake for around 20 minutes or until edges are lightly brown.
Cool the crispy cinnamon sugar cookies.
Let the cookies cool on cooling racks and enjoy with a cup of milk or coffee!

Easy Crispy Cinnamon Sugar Cookies

These cinnamon flavored cookies have a crispy texture, balanced sweetness and they are sprinkled with brown sugar. The perfect fall cookies for cozy days!
In a bowl sift together the all-purpose flour, baking powder and salt. Set aside.
Using a mixer with the paddle attachment on medium-high speed, add the sugar, butter and eggs and mix till smooth. If necessary, stop and scrape down the bottom of the mixing bowl to make sure the sugar is dissolved.
Add the vanilla extract and cinnamon in the mixture.
Gradually, add the sifted all-purpose flour, baking powder and salt. Mix on medium speed, till the mixture is formed into a dough.
Remove the cookie dough from the mixing bowl and shape into a disc or two for easier roll out. Cover cookie dough tightly with plastic wrap and chill for 30 minutes.
Remove cookie dough from the refrigerator and allow to sit at room temperature for 10 minutes. This makes the chilled cookie dough easier to roll.
Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper and set aside.
Roll the cookie dough on lightly floured surface until 1/4 inches thick. Cut with 2- to 2 1/2-inches cookie cutters into desired shapes.
Mix the brown sugar and cinnamon in a ball and sprinkle on top of the cookies. With a spoon press down the sprinkles.
Place the cookies on the lined baking sheets at least 2 inches apart.
Bake for 20 minutes or until edges are lightly brown.
Remove from the oven and let the cookies cool on cooling racks.
Enjoy with a cup of milk or coffee!
Notes
Since cinnamon is the key ingredient in this recipe, make sure to use good quality ground cinnamon to get the maximum flavor and aromas.
You can prevent cookie dough from sticking to the cookie cutter by dipping the cutter in flour between uses.
You can divide the cookie dough in half and save in the refrigerator for up to 3 days or freeze for up to two months. I usually use half of the dough on the same day and save the other half for another time.
Please note that if you freeze or chill the cookie dough for more than 30 minutes it will need more time to rest on the counter top in order to reach room temperature.
If you bake all cookies at once, allow the baking sheets to cool before placing new cookies.
Crispy cinnamon sugar cookies can be stored in airtight container, at room temperature for up to 1 week.
