Easy Rocky Road S’mores Bars

Chocolate and butterscotch chips combined with almonds, pretzel crisps and lots of marshmallows over a buttery biscuit crust. These decadent rocky road bars come together in just 25 minutes.

Classic with a twist

When I first tried rocky road bars, I was pumped! I instantly realized what the hype was all about. You see, s’mores and generally marshmallows are not really a thing back in Greece. But what the heck is rocky road on the first place? Rocky road is a type of no-bake treat consisting of milk chocolate and marshmallows mixed with other ingredients, which tend to vary by country. The traditional Australian rocky road is made with candied cherries and shredded coconut whereas the British version includes dried fruits and digestive cookies.

In United Sates, rocky road comes in ice cream form and bars. The main ingredients are milk chocolate, marshmallows and walnuts or almonds. These rocky road s’mores bars are inspired by the classic version and have a few tweaks for an ever more decadent taste. Let me break it down for you; I combined chocolate and butterscotch chips with pretzel crisps and almonds for a sweet and salty flavor combo. So so good!

Ingredients for Rocky Road S’mores Bars

  • Pretzel Crisps: Pretzels and chocolate go so well together so adding pretzels in the recipe was a no brainer for me. The pretzel crisp crumbs in the crust and chopped pretzel crisps give these rocky road bars a salty hint and great texture.
  • Almonds: When it comes to nuts, you can choose the one you like the best. I prefer almonds, but walnuts or peanuts also go well.
  • Butterscotch Chips: Their buttery and rich taste really elevates these rocky road s’mores bars. Alternatively, you can use a combination of different chocolate chips such as dark and semisweet or stick to the classic milk chocolate chips. You may also use chocolate bar chopped in small pieces.

How to make easy Rocky Road S’mores Bars:

Preheat oven to 350° (180C). Grease an 8 x 8 baking pan and line with parchment paper. Set aside. Using a hand/stand mixer with the paddle attachment on, mix the unsalted butter and light brown sugar until smooth and light in color for about 3 minutes. Combine all-purpose flour, Graham cracker crumbs and pretzel crisp crumbs and stir into the mixture using a spatula. Press the mixture into the prepared pan using the bottom side of a measuring cup. Make sure, not to leave any gaps (see photo 1).

Sprinkle half of the marshmallows on top, then chocolate and butterscotch chips, chopped pretzel crisps and chopped almonds. Top with the remaining marshmallows (see photo 2). Bake for 15-18 minutes or until golden brown. Watch the pan very closely so the marshmallows don’t burn. Remove from oven and let the rocky road bars cool down completely before cutting into squares. Enjoy!

How To Store Rocky Road Bars

Rocky road bars will keep fresh covered airtightly at room temperature for up to 5 days or refrigerated for up to 2 weeks.

Can Rocky Road Bars Be Frozen?

Absolutely! To freeze, cut into squares and wrap individually with plastic wrap or aluminum foil. Place in an airtight container and freeze up to 2 months.

  • 1/2 cup Unsalted Butter softened to room temperature
  • 1/3 cup Light Brown Sugar
  • 1 cup All-Purpose Flour
  • 1/2 cup Graham Cracker Crumbs about 5 full sheets
  • 1/2 cup Pretzel Crisp Crumbs
  • 2 tbsp Unsweetened Cocoa Powder
  • 2 cups Mini Marshmallows
  • 1/2 cup Semisweet Chocolate Chips
  • 1/2 cup Butterscotch Chips
  • 1/3 cup Pretzel Crisps chopped
  • 1/2 cup Unsalted Raw Almonds chopped

Instructions
 

  • Preheat oven to 350° (180C).

  • Bake for 15-18 minutes or until golden brown. Watch the pan very closely so the marshmallows don't burn.

Notes

  • In place of Graham crackers, you can use Biscoff cookies.
  • If you are using full Graham cracker sheets grind them in a food processor or place in a Ziploc bag and crush them finely with a rolling pin. Do the same for the pretzel crisps.
  • When pressing down the mixture into the pan, make sure you do not leave any gaps or loose parts.
  • Besides semisweet and butterscotch chips, you can use dark chocolate chips and/or milk chocolate chips.
  • Besides almonds, you can use walnuts or peanuts.
