Celebrate 4th of July with these easy, no-mixer fruit cups! Crispy base, Greek yogurt filling and fresh berries are making these fruit cups ideal for Sunday brunch.
Bake phyllo cups for 5-7 minutes until they get golden brown. Allow phyllo cups to cool down before filling.
In a medium bowl, mix together the Greek yogurt, Greek honey and pure vanilla extract. Set aside.
Cut strawberries in desired shapes.
Fill phyllo cups with the Greek yogurt filling.
Top each phyllo cup with fresh strawberries and blueberries. Serve immediately!
Notes
Make sure to soak the fresh strawberries in cold water for 15 minutes to get rid off extra grime and chemicals. Rinse thoroughly and pat dry using a paper towel.
Allow baked phyllo cups to cool before filling.
You can adjust the amount of honey to your liking. I find 2 tablespoons ideal but for a sweeter taste you can double the quantity.
Greek yogurt phyllo fruit cups are best enjoyed on the same day. Any leftovers can be stored in an airtight container for 1 day.
