Quick Greek Yogurt Phyllo Fruit Cups

Celebrate 4th of July with these easy, no-mixer fruit cups! Crispy base, Greek yogurt filling and fresh berries are making these fruit cups ideal for Sunday brunch.

Ingredients
 
 

  • 15 Phyllo Cups defrosted at room temperature
  • 1/2 cup Greek Yogurt
  • 2 tbsp Greek Honey
  • 1/2 tsp Pure Vanilla Extract
  • Fresh Strawberries washed and rinsed
  • Fresh Blueberries washed and rinsed

Instructions
 

  • Preheat oven to 375°F (190 C).
  • Bake phyllo cups for 5-7 minutes until they get golden brown. Allow phyllo cups to cool down before filling.
  • In a medium bowl, mix together the Greek yogurt, Greek honey and pure vanilla extract. Set aside.
  • Cut strawberries in desired shapes.
  • Fill phyllo cups with the Greek yogurt filling.
  • Top each phyllo cup with fresh strawberries and blueberries. Serve immediately!

Notes

  • Make sure to soak the fresh strawberries in cold water for 15 minutes to get rid off extra grime and chemicals. Rinse thoroughly and pat dry using a paper towel.
  • Allow baked phyllo cups to cool before filling.
  • You can adjust the amount of honey to your liking. I find 2 tablespoons ideal but for a sweeter taste you can double the quantity.
  • Greek yogurt phyllo fruit cups are best enjoyed on the same day. Any leftovers can be stored in an airtight container for 1 day.
