Quick Greek Yogurt Phyllo Fruit Cups

Celebrate 4th of July with these easy, no-mixer fruit cups! Crispy base, Greek yogurt filling and fresh berries are making these fruit cups ideal for Sunday brunch.

Independence day means patriotic food, festive decorations, family time and of course dessert! I’m grateful for this country and appreciative of all the blessings it has brought to my life since I moved. In search of the perfect dessert to match the occasion I came up with these phyllo fruit cups. Fresh strawberries for red, Greek yogurt filling for white and blueberries for blue. These phyllo fruit cups pay homage to both of my countries and most importantly they taste divine!

Ingredients for Greek Yogurt Phyllo Fruit Cups

Greek Yogurt: Its thicker consistency compared to regular yogurt gives a richer texture to the fruit cups. Mixing Greek yogurt with honey balances the sourness and matches perfectly the fresh berries. Quick side note; Try Greek yogurt mixed with honey, cinnamon and walnuts and you will be amazed!

Phyllo Cups: By now, you should know my love for phyllo pastry. It provides just the right amount of crunch to every dessert and since it has a neutral taste it pairs pretty much with everything.

Fresh Berries: When a recipe calls for few ingredients, make sure you use high quality ones. In this case, opt for fresh organic berries for optimal flavor. Besides strawberries and blueberries you could also use fresh raspberries, cherries, blackberries or black currants.

How to make Greek Yogurt Phyllo Fruit Cups

Preheat oven to 375°F (190 C). Bake phyllo cups for 5-7 minutes until they get golden brown (see photo 1). Allow phyllo cups to cool down before filling.

In a medium bowl, mix together the Greek yogurt, Greek honey and pure vanilla extract. Set aside (see photo 2).

Make sure to soak the fresh strawberries in cold water for 15 minutes to get rid off extra grime and chemicals. Rinse thoroughly and pat dry using a paper towel. Cut strawberries in desired shapes. Fill phyllo cups with the Greek yogurt filling (see photo 3).

Top each phyllo cup with fresh strawberries and blueberries (see photo 4). Serve immediately!

  • 15 Phyllo Cups defrosted at room temperature
  • 1/2 cup Greek Yogurt
  • 2 tbsp Greek Honey
  • 1/2 tsp Pure Vanilla Extract
  • Fresh Strawberries washed and rinsed
  • Fresh Blueberries washed and rinsed

Notes

  • Make sure to soak the fresh strawberries in cold water for 15 minutes to get rid off extra grime and chemicals. Rinse thoroughly and pat dry using a paper towel.
  • Allow baked phyllo cups to cool before filling.
  • You can adjust the amount of honey to your liking. I find 2 tablespoons ideal but for a sweeter taste you can double the quantity.
  • Greek yogurt phyllo fruit cups are best enjoyed on the same day. Any leftovers can be stored in an airtight container for 1 day.
